Shrimp "Tamale" with
Warm Lobster Taco with
The Mansion on Turtle Creek
Yellow Tomato Salsa
Serves 4

12 ounces  Cooked lobster tail meat, cut into medium-sized dice *
4 - 6" Flour tortillas, warm
1 tablespoon  Olive oil
Salt to taste
1 cup Spinach leaves, cut into fine julienne
1 1/2 cup  Grated jalapeno Jack cheese
1-9 ounce jar  The Mansion on Turtle Creek Yellow Tomato Salsa
4 sprigs  Fresh cilantro

Heat oil in a medium sauté pan over medium heat. Add lobster, season with salt and sauté until just heated through, about 1 minute. Add spinach and wilt in pan, about 30 seconds. Add cheese and stir until melted and creamy, about 1 minute. Remove pan immediately from heat.

Spoon equal portions of lobster mixture into the center of each warm tortilla. Roll tortillas into a cylinder shape and place each one on a warm serving plate.

Surround the taco with The Mansion on Turtle Creek Yellow Tomato Salsa. Garnish with cilantro sprig.

* Lobster may be substituted with shrimp, lump crabmeat or chicken.
